4C cooked, mashed yams (~ 3 large) 1/4C melted butter 1/2C cream 4 egg yolks 8 egg whites 1/4C honey salt cinnamon Mash yams w/ butter. Add cream, yolks & seasonings. Beat egg whites until stiff. Mix yams and egg whites gently into souffle dish. Bake 30 min at 325.
